In the Caribbean, I know of:

Puerto Rico, El San Juan (this chip is 39mm, not oversize)

In Panama:

Holiday Inn, 1 Balboa (this chip is 39mm, not oversize)
(The Panama Balboa had the same value as the US dollar)

MGM Grand in Darwin, AUS and Detroit, MI have oversize $1 chips but I don't know what they're used for.

I collect baccaat chips and would be interested in hearing of any other dollar baccarats that exist.
