That's true. Nothing worse than biting into a pork chop that's been under a heat lamp for several hours, only to find that your worst shoe leather tastes bettter.
I suppose all buffets have their days.
For me, the best buffet in all of Vegas is The Garden Buffet downtown at Main Street Station. Granted, it doesn't have the exotic menu selections that the Bellagio has... like broiled Elephant breast, or steamed giraffe neck, but for variety, value and service, time and time again, it's been a winner. The guy manning the omelet station is a real character. Just seems to start your day off right.
