The shop probably looks smaller in person because it's so crowded when they aren't filming... 
They do have some cool stuff there, they also have a ridiculous amount of Pawn Stars "souvenir" type stuff. Sure, a lot of the show is fake, but how entertaining would it be if they kept in all the boring stuff like cameras, jewelry, etc...
(I agree on the sausage thing...toured the Eckrich factory when I was a kid and haven't eaten a hot dog in 46 years! I'll eat smokie-links, and the occasional brat, but canNOT eat a regular hot dog...)
