Las Vegas has become a gourmet's paradise in the last few years. If you want to eat the best, check out this list:

-Guy Savoy, Caesars Palace
-Joel Robuchon, MGM
-L'Atelier de Robuchon, MGM
-Picasso, Bellagio
-Twist, Mandarin Oriental
-Le Cirque, Bellagio,
-Estiatorio Milos, Cosmopolitan
-Michael Mina, Bellagio

I haven't experienced Bar Masa or CUT yet, but can attest that the rest are top notch. These are all $$$$ restaurants though, and best to experience if you are working off a casino comp.

Sadly, Alex at Wynn Las Vegas was closed a year or so ago; was my favorite "great experience" place in Las Vegas.

Michaels in the Convention host-hotel is not to be missed while you are there. This is the same place with most of the same employees that was hidden at Barbary Coast for many years.
