It would be time consuming, but you could certainly generate a 1975 list of chips in play by consulting "The Chip Rack" and referring to the "Date" column on the far right hand side of every page. If you include $1's, $5's, $25's and roulettes, you're probably talking about a couple hundred chips. Might be best to limit the project to just $1's or $5's - and yes, it would make a fantastic display - good luck!
