A great number of paper currency has no date. Many use a 'series' date that reflects the last redesign of the note. The USA uses such dating on our paper money. Often though currencies can be 'dated' by the signatures on the note or other differences.
Dating chips would in my opinion create 'limited issue' chips. Same as coins, all the same but with the exception of the date, making each year sought after. I don't see any advantage to a casino for dating chips, it would seem to be another extra cost to them.
Dating chips would create a whole new facet to collecting, I believe, but I do not see it happening other than the few chips already being dated.
I have never dated a coin or a chip but in high school I did date a fat girl once.
