Keep in mind that if we cut the catering money we spend at the buffet then we will probably have to make it up somewhere else and having a bartender may be one way to do that. They charged a flat cost for the Buffet bartender so I don't know if it really is a flat (set up)charge or per hour charge.
One other thing to consider is that we could cut convention expenses to the bone but how many members or new, potential members would want to come back? I am talking about things like the free drinks in the meeting rooms, the volunteer party and that is about it. Almost everything else is a mandatory expense and there are not a lot of those. We run a pretty lean convention.
