Assuming the missing chips never show up:
Contact the South Point, find the cost for them to issue a new set of SP tournament chips. Pay them that cost in exchange for the return of the "old" set (missing a few).
Sell the old set on "The Board", , wherever. Depending on the SP cost for a replacement set, some $$ might be made here, and it takes the wind out of the resale value of the person that took them.
