James - Poker tourney chips are easier to take than roulette chips. Roulette chips never leave the table with the players, but tourney chips move tables all the time which offer opportunities to slip a couple in your pockets. You also never "cash out" your tourney chips, so there's usually no dealer who is going to spot a few missing chips. The flipside is that tourney chips are much more expensive to obtain as the entry fees generally exceed what you could buy into a roulette game with (that is, of course, unless you run well in the tourney and amass a mountain of chips.)
