Most likely the scene of the guys playing poker was from stock footage the movie/TV studio had of a casino. They use old footage they own instead of building a set, hiring actors, etc. Saves a lot of money. When they needed a close-up, they just used some other chips. I guess they figured most people were not watching "Charlie's Angels" for the poker chips!
