I have seen casinos where the tables are differentiated by the color of the logo, so there may be red Ritz logos, blue, etc.

In addition, though, I have seen European casinos that don't use distinctive colors for each player - everyone uses the same chip (or there may be a variation with a stripe) and the numerous helpers working the table seem to keep everyone honest. That's how it was in Germany, where I visited two casinos.
