the two main reasons that I know of are it makes it easier to drop a single chip than to drop several of lower denominations. Less dealer error involved if they only have to remember to drop a single $3 or $4 chip. Also, it keeps the lower denomination chips on the table and in play longer so the dealers don't need to get a fill for their rack as often.
