I've done some work on watches, everything from low end quartz to working on a few of my Rolexes.

The issue is, I don't know if you'll be able to find a cannon pinion that's long enough to make it through the thickness of a chip.

You might have better success finding a good company that will print a hi-res image of a chip on a blank dial.

There's also really amazing artists who hand paint dials. I saw Linday Lohan with a vintage steel Rolex Datejust, with a gray dial that she had a skull and crossbones painted onto the watch. Very cool...very hip.
