You can do the Arctic just by going to Alaska, and

Antarctica is pretty easy, too. The Argentine Air Force, which keeps a year-round base there is so short of funds because of their economic crisis that they'll give you a ride from Buenos Aires to their Antarctic base for giving them a new computer. You can get to Buenos Aires in 10 hours from Miami, and it's not especially expensive. And, it gives you the opportunity to cross the equator if you've never done it before.

If you're not into roughing it with the Argentine Air Force, there are plenty of cruises out of Buenos Aires from Decenber through February.

I'm putting off the trip because you need to be able to carry your own luggage and climb down a rope ladder. Right now I can't do that, but I'm out of my walker, and using a cane. When I lose the cane I'll be ready.
