If you are looking to play cards, you'll find that small stakes no-limit dominates all three of the cardrooms in the area. Seneca Niagara does spread limit on a regular basis, and on the weekend you probably won't have a problem finding a $5-10 limit holdem table, but nothing higher.
Like Bob, I'd recommend that you stay on the Canadian side. At present, a passport is not required for border crossings. That might be different in September.
I can't say much about eating. The American side has a Little Italy that probably has good restaurants. In Canada, I know that there are several sushi and Japanese restaurants that are quite good as they cater mostly to Japanese tourists. There is also a restaurant that I believe is called "Table Rock," located right beside the gorge, and run by the Ontario public parks agency. They are currently closed but should be open by the time you get there. I don't think the food is world class but the view is terrific, and it is very nice to eat or have drinks while enjoying the view.
