I have my moments, but they are becoming few and far between. Yup, I use Photoshop (Elements) rather than the software coming from Epson. The difference being that the Epson software driver contains the code to save the image as a JPG -- and that's fine. Photoshop uses the same driver through the TWAIN interface to bring in the raw image and allow me to rotate, crop, cut, and then save as a JPG. If you take an existing JPG (which is already compressed) and try to re-edit it, you will lose more clarity.
Its the same in digital photography. Most cameras save out to JPG files and that's great for like 90% of people out there. But many can also save to a RAW format which is much larger and contains all the "rest of the data" that the JPG strips out. So then it can go into Photoshop for additional work.
There's nothing wrong with saving it directly from the Epson scan software. I do that sometimes.
