As I have heard....
..they will not turn it in to the IRS or tax it right there and then because with craps, these are a bunch of smaller wins. If on the other hand you have a single bet win of,just for example 10,000, they could tax you right there and then...just like with slot machines. It would be very hard for them to interupt the game each roll to do the tax stuff and pay you an after tax amount. So....what I have heard they are doing is for a win over 10,000, they give you a form and rely on you to pay the appropriate taxes.
These were just bits and pieces that I remember from conversations. I'm sure there are some chippers in the know. Also a call to the gaming comssion could probably give you some answers.
