"it is much easier for airport security to view the contents of you carry-on bag."
Yes, and it's also easier for everyone else in the security line to see that you're carrying chips when they decide to open your bag for inspection. If you conk out on the flight home, you may awake to find yourself chipless. People will steal anything if given half a chance. I always tie my carry on bag to my leg when flying home...they are not going to be able to take the bag without waking me.
I once had my favorite 4 Queens baseball cap stolen right off of my head while I was sleeping. I blocked the aisle and loudly stated that no one was getting off the f.... aircraft until my hat re-appeared. It did. (of course, that was pre- 9/11...I don't know how well the blocking the aisle idea would go over these days). But give them an opportunity, and they will steal anything they can.
It is your RIGHT under Federal law to request a "private screening." This is done in a room out of view of other travelers, and I highly recommend it. (it also requires two TSA agents to be in the room with you, and they are much friendlier in private than they are during a standard screening). Just make sure you request it politely.
