Based on your itinerary, it looks like you've got all day the 23rd and 24th for sightseeing and traveling. It sounds like plenty of time for a Seminole trip and a visit to the everglades. I've been on a boat cruise and also an airboat tour. I'd recommend the airboat tour - get to see some nice birds and alligators up close. I can't give you any recommendations where to stay because it's been so long since I've done it. Two days is actually a good chunk of time to get there and back. My advice - Go for it.
