The older ones with the Concentric Circles were put in a press and polished with a wool buffer. This was done one chip at a time, by hand.

Do you mean steel wool or just wool? Stainless is very hard, I do not see how steel wool or wool could put fine line concentric circles on stanless steel from the center out... mystery to me....
