In my opinion, scanning directly into Adobe Photoshop is the most satisfactory. You don't use the editing software that comes with the scanner at all. I also use an Epson photo-scanner, but a different model from yours.

You can get a "light" version of Photoshop for $100 or so. It has all you need for managing your scans.
