I guess the security operates differently for internal USA flights, but when I leave the international terminal my checked bags are x-rayed in my presence, and once 'cleared' TSA allows me to re-strap and lock them.
They put a piece of tamper evident security tape across each x-rayed bag. I usually ask them to put it right round each of mine. Ive never had a problem.
I do also take one case carry-on and of course anything of any value goes in there.
