I have visited Vegas with my Mom (who brought my nephews-same age range) and my lady friend from Carson City (who has 2 boys in that range). I stay at Rio and Harrah's generally. There are actual babysitting services in Vegas. We got the info form the hotels. The pools at both places always seem to have plenty of kids.
The Rio has a shuttle that runs to Harrahs and you don't need to be staying at Harrahs or Rio (Palms is across the street. Harrah's is not an inconvenient distance from the Riv, its probably where I'll be (or the flamingo-free rooms)
My Mom also says she has had pretty good luck at the Station Casinos and Sam's Town.
As for entertainment, the boys all loved the volcano (over and over and over till I wanted to sacrifice one of them), the show at TI, the lion at MGM, free acts at Circus Circus, and the Excalibur has games for Kids ($).
If Melissa joins me for the convention, we could let her watch all the kids and we could visit the splash bar.
