Though the usefullness of Google searches and email, I finally straightened out (in my mind at least) the connection between the 11:00 on the Elks Club (BPOE) logo and the 11:00 about the Armistice ending World War I -- the famous "the 11th hour of the 11th day of the 11th month."
I had been told long ago that at 11:00 PM there would be a moment of silence at Elks Club meetings to remember departed members. I always assumed that that hour was selected and derived from the WWI Armistice story. Seems that I was half right and half wrong. There is a link, but the 11:00 hour selected by General Pershing, an Elk himself, was derived from the old Elks Club practice, not the other way around!
