instead of including them in this years auction, have them as a head-start for next years...

Perhaps the Club will spring for a plexiglass donation bin, that has a unique chute designed to gently place the donated chips in a pile or stack. This years "overage", could start-out next years donating... I'm sure you'd get hundreds of donations at the Convention, as everybody will have traders they don't mind tossing in.

If there are any engineer chippers (I'm sure there are a few), perhaps one could be convinced to design a Rube Goldberg-like contraption, that would entice people to donate their roulettes simply to enjoy the spectacle of the device in action?
