I have found that eBay has done a pretty decent job of allowing you to track the status on the My eBay Sold Items page. You do have to mannually update the status sometimes for people who do not use check-out or PayPal. It lets you see what has been paid, what payments are in the mail (assuming they used checkout), what has shipped, and what feedback you have posted and received.
