The scan resolution is fine. It's the JPEG compression that's making the image look real bad. Play with the compression/quality settings and check the file size too.

Remember that the color red is the worst for JPEG compression. Overly compressed red colors tend to look very blocky when compared to other colors using same quality/compression settings.
