St Maarten is the only stop you'll have that has casinos. There are quite a few right in the Downtown area. Hollywood has a few different chips. Ask nicely and they might see if there's others in the back. Make sure you tell them you're a collector.

Dolphin Casino is by the airport. As is Mahu.
Coliseum and Diamond casino have chips as well as Rouge et Noir. I havent been to Beach Plaza Casino, but heard they have table games now. If they do, i could use a couple chips.
