There's been a "Super Bowl" (or super-something) chip show every year in Las Vegas for the past 5-6 years. It's not quite as big as the trading bourse at the Club convention and is only two days instead of three but should satisfy part of your need for a chip fix in the winter months.

Next one is next weekend at Arizona Charlies on Decatur. Even though rooms can be expensive in Las Vegas during this event, the off-strip location gives you a shot at some pretty reasonable room prices.
