I agree with Allan - it is unlikely that the $ sign would be used here. The only chips with a link to the UK which I have seen with a $ sign have been those used on ships which use the $ as currency (such as the Sportsman chips which are seen occasionally).

It may be Australian - a search on Yahoo brought up some sites with a reference to Carlisle in Western Australia
