I think you're suggested categories are fine, particularly if they result in auction groups of roughly comparable number of chips (or value of chips, if you prefer).

Your post also reminded me that I never sent you any chips for this project. Sorry. So packaged up eight mint condition Sonoma Joe's tournament Chipcos to add to your California list and will mail when I go out today.
