I would have thought it was no different to leaving your wallet on the table (which is probably why many insist you dont leave anything out as they are not responsible).

Ive been politely advised by dealers on a busy table to 'keep firm hold' on high value chips.

Of course, if someone steals your chips, whose property are they stealing?
