Jay has made up the perfect spreadsheet already, we just need to have Gene fill in the special ones. It seems there are some that came in a half color, while the same chip may have four inserts.
So aside from the standard designs, there might be some variations floating around.
As for the price, it varies. I've been getting some for $2-3, the auctions on eBay are going for $3.95 (opening bid) to $8. Some folks say $10 a chip...
There were complete sets sold, when they came out, so that should be the base group for collectors.
The above applies to the dated commemorative chips issued with opening and closing dates.
The HS chips can go for more, from what I've seen, and there are less out there.
Consider it a matter of taste, because some people wouldn't want any of these in their collection. I just do it because there's a list and they are cheap and it's fun to try to complete a whole set of something.
