Here's the error message that you get if you try to do that:

"eBay does not permit wildcard (*) searches containing fewer than 2 numbers. We have removed 5* from your original search."

That search will eliminate any auction with "11" in the title. Of course, that eliminated about 1,400 auctions from the Chips category, so if you don't need a Red Dog chip, it's probably fine.
