John; I have found patterns in A.C. where the roulette chips closest to the player are put into play first and those colors near the rear of the table are generally used last. It's an interesting fact to know, because one can see what colors are available and have a pretty good idea which color will be given to the next person buying in.
On the other hand, depending upon the property, some specific colors are occassionally reserved for higher denomination buy-ins and would only be given out to a lower buy-in in the event it was the only color not in use at the table. Sometimes the dealer will even give out white $1 house chips before awarding the particular reserved color to a small buy-in player.
