It isn't the fact that you are putting the in there, but rather that you arent having the next letter (G)adjacent to the &. The code is for the ending of the bold command. Here, you can put about anything to interupt the & from the next letter and have it come out looking right. However, in HTML, that would be an error. But here on the chipboard, it's a bit more forgiving. The "amp;" is the correct way in html code.
