We did this as well at the Opera house. in fact one of the two places (I think it was the Opera House) had a small order sheet that you could fill out telling them which ones and how many you wanted. Then the cage personnel would go through the order sheet and fill it from the chips. They have them well organized and it did not take very long - of course they did not have all the chips we wanted, or all of the quantity we wanted on some of them.
