I would NOT leave bags containing chips in significant quantity with a bellman, particularly at a convention hotel. You're just asking for trouble. Ask for late check out if necessary and leave them in the room. Or rent a car and use the trunk. True, either of these methods could conceivably result in a theft as well, but it's not as likely as leaving them in checked bags at a chip-show or coin-show hotel.
