I use display boxes that you can find at antique shows, shops, etc. to store ours.

They have glass lids, so you can see the dice, and they stack up pretty well, so don't take a lot of room. They seem to be 3/4" deep, and a lot of dice are 3/4", so the lid sits on the dice...but it doesn't seem to hurt them.
We started with just 1-2, and added more as the collection grew. I think we're up to about 8 boxes now (2 for the strip, 2 for downtown Vegas, 1 for other vegas, 1 for reno, 1 for tahoe, 1 for other nevada).
Be careful of 1 thing...do the "sniff" test. If any of the dice smell like vinegar, quarentine them! They're deteriorating (will "shrink", and the spots will start to pop off), and can "infect" others that are near them.
I've always been a little confused on the casino cancellation vs. the mfr. cancellation. As I understand it, the most common casino cancellations are a "stab" with a needle-like device, a tool that presses a circle into the dice, or a scratch or X with a sharp tool. The 4 is the side most commonly cancelled. Void stamped into the dice, or a symbol (such as a circle) done with a gold hot-stamp is often done by the manufacturer if dice are slightly imperfect or there was an overrun, and those dice often end up at GGS.
