There are two excellent books that cover casino chips from Las Vegas:
o The Chip Rack - lists all chips from Nevada and includes a price guide. Updated annually.
o The Official U.S. Casino Chip Guide - lists all chips in Nevada, Atlantic City, Colorado, Deadwood and the Riverboats with prices. Not as much detail as The Chip Rack, but includes pictures of many of the chips.
