Jason - The Cheques are purchased in Sterling (or whatever) in the USA; mailed to the UK (or wherever)... and cashed like any UK (or whatever) currency.

If there's a charge for "converting" Sterling notes into Sterling notes in the UK, I suggest you move; quickly!
