I've seen blind people play both blackjack and poker. A partner handles the cards and signals the blind person the hand. He makes the decision to stand/hit/call/raise/fold.
There is a poker player (forgot his name, Andy will know) that plays from a rolling bed. He is flat on it and can not use his arms. His bed is parked behind his partner. He is a pretty good player.
