Pan is dealt out of a shoe by the players themselves. The pencil erasers are traditionally used as 'tackee finger' to get the cards out of the shoe. Pan is run almost exclusively by the players, with the dealer present mainly to make change, collect the house commission and muck (shuffle) the cards.
