Unions across the country have been unable to hang onto what they have enjoyed in the past with respect to employers paying 100% of health insurance with the tremendous escalating costs. That's why there is such an emphasis on a National Health program to be put into effect through Congressional legislation which would benefit union members as well as non-union members and management vs. non-management... just like Social Security.
If the culinary workers union is going to draw a line in the sand over the employer paying 100% of the health coverage ... and not negotiate this important issue where employees pay a part of the cost ... this strike could be another long one, just like the one that happened at Frontier years ago ... and the end result might be no different.
Just expressing an opinion from a retired and wiser union man.
