Question - is getting caught taking roulettes really as likely as people make out?

I only ask because although I don't usually collect roulettes, I have picked up a dozen or so in Vegas when I've been playing and just thought to take a couple - one for me, one as a trader. Never been caught or questioned, even though I was never particularly discreet and certainly didn't take stacks of 20 chips. Have I just been lucky so far?
