Have you given any thought to a non-casino hotel? You might want to look at the Hilton Grand Vacations (there are two of them - one near the Flamingo on the strip and one near the LV Hilton on Paradise).

This is a timeshare-type hotel but they do rent rooms like a hotel (you can check either hilton.com or orbitz.com for pricing).

You would be able to get a larger room (like a three-bedroom) and they have a great pool area. I would suspect their prices being competitive with the types of hotels you are looking at.
