Depends on the email client you are using. In most of them you need to go to the account setup area and you will see an entry for name.

In Outlook Express it is in the Tools Menu under Accounts. Find the account and press the property button. You will see the user information where you enter your name. Other email clients (such as Eudora or Pocomail) are very similar.
