Go to Fitzgeralds some time . I was there back last June(when I took the picture in fact) and they were using some red $5 chips that were almost black with dirt, rounded over on the edges, almost flat in the engraving and seemed that they could be a little thinner than your average chip. Of course I didn't have a caliper with me so I can't be sure. I wasn't doing so well that chip (oops Trip) so I decided to forgo taking some home. I needed the cash if you know what I mean.
As for grading of chips, I don't think you need a 70 point scale but there should be a recognized standard for chips that defines such things as Uncirculated, Very Good, Good, Fair, Poor etc. I too would like to see Archies listing. It would be good to have an idea of what is meant when someone says Good etc.
