Ask the cashier for the best ones they have.
Some casinos will have UNC chips.

I also recommend the Legends Museum at the Tropicana.

Gamblers General Store on Main St, downtown, will have most LV $1 chips. You will pay above face but it could be cheaper than driving around, parking, valet tips, etc.
