This is definitely more than a single-day job. I've done it a few times myself and it's exhausting! It could take you an hour just to do 3 consecutive casinos (like the Mandalay Bay/Luxor/Excalibur, for example) and then get back into your car to get to the next small group.
I would propose that you take advantage of the unique opportunity presented by the convention gathering and start kind of a round-robin type of event. Get a bunch of people who are looking to do the local chip-run thing, and divide up the casinos and the chip orders. (I would hate to think that I'm taking business away from the local suppliers, mind you, but I have always considered chip runs to be more than just fun... almost a hypnotic experience).
